

Saviya is a popular dessert with South Asian Muslims on Eid al-Fitr. It is made by stir frying vermicelli, ghee, sugar, and aromatic spices such as cardamom. Many families enjoy saviya right after Eid prayer for brunch or breakfast. Indians call it by many names, kheerni, payasam, saviya, seviyan kheer and semiya.
Ingredients
2 Tbsp Ghee
100 gram Vermicelli
25 gram Cashew nuts
25 gram Almond
25 gram Raisins
600 ml Milk
3 tbsp Sugar
5 Green cardamom cloves
A pinch of Saffron
Instructions
In a pan, fry Ghee and vermicelli together.
Add cashew nuts, almonds and raisins into it. Fry them together.
In a different pan, boil milk, sugar and smashed green cardamoms.
Add the fried vermicelli mix into the milk pan.
Combine ingredients together and add saffron.
Add a little extra milk to loosen the dish, towards the end.
Serve hot.
